What is the difference between epoxy and glass bodies in pH probes?

Epoxy bodies are more robust than glass and less expensive. Glass bodies can withstand higher temperatures, up to 100 to 110 degrees, as well as organic solvents. They are also easier to clean - but more expensive than epoxy bodies.
